Peppermint Patty Cookie Sandwiches

Ingredients

  • 1 package (14 oz) refrigerated Pillsbury™ Candy Cane Sugar Cookie Dough (12 Count)
  • 1 tub (16 oz) vanilla or chocolate ready-to-spread frosting
  • Green candy sprinkles or decorating sugar, as desired

Instructions

  1. Heat oven to 350°F. Divide each cookie dough round in half, reshaping as needed. Place 24 cookie dough rounds about 2 inches apart on two ungreased cookie sheets.
  2. Bake 11 to 15 minutes or until edges are golden brown. Cool 2 minutes on cookie sheet. Remove to cooling rack. Cool completely, about 30 minutes.
  3. For each sandwich cookie, spread 2 heaping tablespoonfuls frosting on bottom of 1 cookie; top with second cookie, bottom side down; gently press together.
  4. Roll each cookie sandwich in decorative sprinkles or candies to cover edges of frosting, using photo as a guide. Store in a single layer in covered container.
